An Unusual Quartet: Sweet Tempeh Stir Fry

Since we’ll be gone for the weekend, I had one mission last night – use up the groceries! A few handfuls of Spinach leaves definitely won’t last until Monday; an opened packet of Tempeh will dry out soon; a few spears of frozen Asparagus needed some saving from freezer burn; a lone Sweet Potato is hoping we get to it before the growing sprouts do!

I had, on my counter, an unusual quartet –2 servings of Tempeh, 2 cups of Spinach leaves, 5 frozen Asparagus spears, 1 small sweet potato. My inner-chef reached for the Balsalmic vinegar, Olive Oil, Agave Nectar, Cinnamon and Nutmeg from the pantry, without any real idea what that would taste like. I asked D to cut up the SP into very small cubes, I started to heat oil in the pan, eventually added the Tempeh and got close to losing his trust when I covered it in B. Vinegar…followed by drizzles of Agave nectar and sprinkles of Cinnamon and Nutmeg…

Heather’s Sweet Tempeh Stir Fry

2 svgs Tempeh (one block), cut into cubes
1 sweet potato, cut into small cubes
2 cups Spinach leaves, raw
1 svg Asparagus spears, cut into pieces
1 tbsp Olive Oil
2 tbsp Balsalmic Vinegar
Agave Nectar
Cinnamon, Nutmeg

Heat oil in a stir-fry pan on medium; add tempeh & drizzle in Balsalmic vinegar, Agave nectar to taste. Add sweet potato cubes, and additional Agave (to taste*), sprinkling in Cinnamon and Nutmeg. Saute for ~5 minutes, until heated through, adding Spinach and Asparagus, continuing to cook until leaves are wilted.

*the amount of seasonings and Agave you use are entirely up to you! I drizzled in the nectar a few times while everything was cooking, and sprinkled the Cinnamona and Nutmeg until I could taste it to my liking. 🙂

Not only was this an unusual, but delicious and sweet, combination – it was packed with nutrients! As is usually the case when you combine veggies and healthy proteins…

Protein: Tempeh, veggies
Carbs: Sweet potato, Tempeh
Fat: Oil, Tempeh
Vitamin A: sweet potato, spinach, asparagus
Calcium, Iron: spinach
Vitamin C: asparagus, spinach

A dinner full of “leftovers” that left us fueled up to take on the weekend! Happy Friday!
