burgers ‘n chips, done right

First things first, I finally got my powdery almond non-butter to cooperate! I have, successfully, created Homemade Almond Butter. See for yourself:

All it took was a little more pulsing and little bit of patience with my Food Processor (FP). For those of you just joining, I tried this AB thing a few days ago…got a little restless…and ended up with a powder/paste thing. It wasn’t tastey. And it certainly wasn’t butter.

Now I have the butter! It is delicious. Here’s how I did it…

3/4 c Raw Almonds
1 tsp of each: Cinnamon and Nutmeg
Drizzle of Honey

Pulse, pulse, and PULSE SOME MORE until it finally becomes a nut butter. Be patient, it will come. And it is well worth the wait!

We had rain and no shine here in DC today; with two days in a row of running, I decided it’d be just fine to stay IN tonight (stay dry) and try something new. Since Bob & Jillian sufficiently killed my legs last week ( I use their Powersculpt DVD), I went for an old Yoga video instead.

I’ve never tried said video, so I started with “Day 1” (out of 5). Well, 20 minutes and just a few poses later, we were already relaxing. Then, 5 minutes after that, we were sitting up and closing one nostril at a time while we inhaled and exhaled.

…..Um, what? Maybe I’m just not into this yoga thing enough yet. But, the concept was a little lost on me. I enjoyed the motions until I was instructed to “Use the right hand to hold the left nostril”. Good bye, Yoga man!

Time to cook!

I picked out the perfect Sweet Potato at Whole Foods last week for SP Chips (i.e. perfectly round and long)! I chopped it, put it in a tupperware bin and tossed with 1 tbsp Canola Oil, Garlic Powder, Thyme and Black Pepper. Preheat the oven to 400*.

Bake for ~15 minutes, turn and bake ~8 minutes, or until they’re as crispy or soft as you like them.

Add a Tomato & Basil Veggie Burger (+ raw baby Spinach leaves & Grated Parmesan Cheese), whole-wheat bread and some ketchup…

…and Enjoy!

Protein: veggie burger & bun
Healthy Carbs: sp chips & bun
Vitamins A & C: sp chips & spinach
Healthy Fats: canola oil

How do you like your Sweet Potatoes? I experiment with seasonings and baking options every time! Fries, chips, whole potato….sweet (brown sugar/cinnamon), spicy (cumin/chili powder), or my spice-mix of the night!

  1. Yeah, I could pretty much eat sweet potatoes every night. I made some last night. Sooo good. I want to make homemade bean burgers sometime soon, especially since nice weather is making an appearance these days, which equals grilling time.

    PS-I’ve done the nostril breathing thing in a yoga class before. Kind of weird. I love yogadownload.com’s free 20 min videos. Last night I did two of them!

  2. ❤ Sweet Potatoes! I had one for dinner, but just nuked it and had okra, squash, tomatoes and spinach on the side. Boring. I am jealous of your dinner.

    I love sweet potatoes, though I’ve never made the chips. My mom cubed and roasted them (with a little seasoning) for Easter dinner, and that was delicious.

    As for the yoga video, I hear ya. I like yoga a lot, but when I’m doing one of those videos I feel a little silly.

  5. Awesome that the AB turned out. I MIGHT be brave enough to try it this weekend. I have a tub of almonds that aren’t fresh enough to munch on (not much crunch). Wonder if they would be okay for AB??

    What a good looking dinner! I LOVE SP fries. Last night I did something different and blanched them first, then grilled the medallions on the BBQ. DELISH!

      I think the soft Almonds will make *creamier* AB! Just a guess, but either way they should work fine!

      SP fries on the grill? This is also brilliant. Must try. 😉

  6. ok, so I’ve totally done the nose breathing thing, and it’s actually amazing when you’re having sinus/allergy issues. I don’t necessarily “get” it’s relationship to yoga, but my god I love to do it when I need it. 🙂
